Parents! I have a recipe that I think you and your family will love. It’s a kid-friendly turkey meatballs recipe that is not only delicious, but also a great way to sneak some veggies into your kids’ diet.
I have a toddler and let’s be real – getting toddlers to eat vegetables can be a challenge. But as a mom, it’s important to make sure that our kids are getting the nutrients they need to grow up strong and healthy.
That’s why I love these kid-friendly turkey meatballs! Your kids won’t even notice that they’re eating vegetables!
Ingredients
- Oil spray
- 1 1/4 lb ground turkey
- 1/4 cup panko crumbs
- 1 large egg
- 1 small onion, diced
- 2 celery stalks
- 2 carrots
- 2 cloves crushed garlic
- salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Lightly spray a non-stick baking sheet with oil.
- In a food processor, combine the celery and carrot and mince (2/3 cup).
- In a large bowl, combine the ground turkey, panko crumbs, egg, onion, celery and carrot mixture, and garlic; season with salt and pepper, to taste.
- Using clean hands, mix until combined. Roll the mixture (1/8 cup each) into meatballs.
- Place meatballs onto prepared baking sheet and bake until cooked through, about 16 to 18 minutes.
- Serve immediately, with pasta if desired.
