Being a Taurus, I have always been conscious of my finances, but at the same time, I’ve always had a passion for great tasting food made with high-quality ingredients. That’s why I fell in love with this recipe – it’s not only delicious and budget-friendly, but also super healthy and, since it’s vegan ceviche, it is pregnancy-safe!
When I was pregnant, one of my goals was to eat seven servings of fruits and veggies a day, and this recipe made it so easy to do that. My mother-in-law shared her original recipe with me and I added some spinach to get a little extra iron for the baby. Trust me, this is one of my all-time favorite recipes and I hope you’ll love it too!
Vegan Ceviche
Makes 8 servings, Total cost: $3.44
Ingredients
1 red onion (65 cents)
1 large cucumber (50 cents)
14 oz palm hearts ($1.99)
Packed cup of cilantro, finely chopped (25 cents)
Packed cup of baby spinach, finely chopped (90 cents)
1/2 cup of lime juice (96 cents)
1 tablespoon tomato juice (16 cents)
Salt
Pepper
Directions
- Dice the onion and soak it in just enough lime juice to cover it (about half a cup), refrigerate the mixture for 20 minutes
- Dice the rest of the ingredients
- Mix all veggies together with the onion/lime juice mixture
- Add about a tablespoon of tomato juice and salt and pepper
- Optional: add more salt, pepper, tomato, or lime juice to taste!
When storing the finished dish, make sure to use a plastic or glass tupperware container instead of a metal mixing bowl to preserve the taste.
