Brown sugar is a healthier alternative to white sugar. It contains molasses which provides essential minerals like calcium, potassium, and iron. Using brown sugar in your recipes can help reduce your intake of refined sugar, which has been linked to an increased risk of heart disease.

Heart-Healthy swaps

Vegetable oil is a healthier option than butter or other high-fat oils. It contains more unsaturated fats that are better for heart health. Swapping out saturated fats for unsaturated fats can help lower cholesterol levels and reduce the risk of heart disease.

Strawberries are not only delicious but also packed with heart-healthy nutrients. They contain fiber, vitamins, and antioxidants that have been linked to a reduced risk of heart disease. Eating strawberries regularly can also improve blood sugar control and lower blood pressure.

Heart-Healthy Strawberry Muffins Recipe

Ingredients:

  • 3 ripe bananas, mashed
  • 1 1/2 cups whole wheat flour
  • 1/4 cup coconut flakes
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup frozen strawberries, thawed and chopped
  • 1/4 cup almond milk
  • 1/4 cup vegetable oil

Directions:

  1. Preheat the oven to 325°F. Line a muffin tin with 12 liners.
  2. In a medium bowl, whisk together the whole wheat flour, baking soda, cinnamon, salt, and coconut flakes.
  3. In a large bowl, mash the bananas until smooth.
  4. Add the brown sugar, eggs, vanilla extract, almond milk, and vegetable oil to the mashed bananas, and mix until well combined.
  5. Add the dry ingredients to the wet mixture, and mix with a spoon until just combined. Fold in strawberries. Do not overmix.
  6. Spoon the batter into the muffin cups, filling each about 2/3 of the way.
  7. Bake on the center rack for 25 minutes, or until a toothpick inserted in the center comes out clean.
